Key Responsibilities
- Develop and execute the seasonal/limited-menu Convict Settlement Menu in line with Tasmanian flavours and heritage.
- Oversee kitchen operations: food prep, plating, inventory, cost control, cleanliness, and staff supervision.
- Ensure compliance with food safety standards and regulations.
- Collaborate with management to innovate new menu items.
- Proven experience in high-end hospitality kitchens (minimum 3 years preferred).
- Strong knowledge of modern Australian/regional cuisine, ingredients, and techniques.
- Ability to work with limited resources and occasional constraints (given our remote, eco-living environment).
- Leadership, organization, and time-management skills.
- Food safety certification (or ability to obtain).
- Willingness to work flexible hours (weekends, holidays).
